Excellent bread machine!
Purchased this wonderful bread maker about 6 wk ago and just love it. I bake about 2-3 times aweek and no failures so far however be warned thr 4-5 cup flour recipes are huge, definately family size, even with whole wheat flour. I never use the vital gluten as our Canadian wheat is great and gives good rise always. The only door stop loaf so far was the recipe in the book containing cinnamon which kills yeast apparently. I mixed it in the flour with all the other dry ingredients, guess that was not a good idea! I always add yeast last on top of dry ingredients and warm water and butter first.The top of every loaf is always nicely browned on every setting however the sides and botton are a little too brown even on light setting basic recipe for white bread, perhaps due to too much sugar or whole milk powder? The whole wheat setting for crust is auto preset and bottom and sides crust are very dark but still wonderful high loaf bread and this too was a high sugar bread.The winner in the preset loaf where crust cannot be adjusted is the french bread crusty loaf.......a beautiful light airy bread, taste excellent and perfect golden crust all around but it had no sugar or milk powder, just oil and salt any maybe that is why, so still have more fun experiments to try it seems.The pan is surpprisingly light, with very slick coating. Single paddle and pan shape and kneading very thorough, I am impressed and loaf shape is quite high semi rectangular deep enough so no stick to lid issues.Anyway the machine works great, the paddle only lays partly prone due to dough caught under the paddle , makes a dent in bottom of loaf but that is still better than the machines that tear a huge hole when paddle is left in to bake. However there is a beep after last knead so you can remove paddle if desired.The add in dispenser works fine and goodies get mixed in properly.The dough is extremely well mixed and finished loaf shap is smooth unless the dough is too dry then thhe top may be lumpy.

First impressive then very dissappointing
The bread maker looks beautifully and is a real gem in the kitchen. The large screen and the dial are great to navigate through different options and I love the lightbulb which lets you check your bread without opening the lid.Unfortunately, there are a few things that make the bread maker very unattractive and unpractical. First of all, I bought this machine to bake sourdough bread. After I read in the answers that the machine can make sourdough bread I was very happy. There is no sourdough program though, however I hoped I can program it accordingly using a custom program. Unfortunately this doesn't work as the machine restricts the maximum rise times between the punch downs to 1:40hrs! Whyyy? What is the point of doing this? This way you can't easily make sourdough bread which rises much longer than 1:40hrs! Of course you could use a knead program and a bake program but then its not fully automated, i.e., you can't set up your sourdough bread in the morning and have it done for dinner after work. That was the whole point why I bought this machine.Since I use my own programs I also tried to program my own bake program. Unfortunately, the maximum temperature is restricted to 300F! Whyyyyyy? I have never heard of a bread that is baked at 300F and most other bread bakers use 350F as baking temperature for a reason. A maximum (!) baking temperature to 300F doesn't let you bake good breads. Of course you get some kind of bread out of this machine if you just bake it longer, it's just not the best in terms of flavor and texture. For me those two restrictions are absolutely unecessary and render this bread maker useless for my purposes. The rise time limit is from my perspective a very unfortunate Software limitation that makes no sense at all. What is the purpose of this restriction? The temperature restriction of 300F might be hardware, I just don't understand why you would design a bread maker that can't reach the most typical temperature for bread baking, i.e., 350F.

Good machine, great results, not perfect.
So far, we are really happy about this Breville bread making machine. This is the first bread maker we own and so far we're having a great experience with this appliance.All bread makers make some noise, and this one does too, as mentioned in some of the previous reviews, but it is bearable to be in the same room while it does the kneading. The main issue we have with noise is that at some point in the cycle, the machine will vibrate, probably to dislodge the nuts in the nut dispenser. This makes A LOT of noise, enough to wake us up. Sadly, this function cannot be turned off, even when the nut dispenser is not used. Only the beeping can be turned off.This being said, the nut dispenser is a really cool feature. The machine wobbles quite a bit when kneading, we found that putting it on the floor helped reduce the noise and make the kneading more efficient.The collapsible paddle, which seem to cause trouble to some users (see previous reviews), does indeed occasionally fail to collapse, but still does most of the time. When it does not, it does not "take a big chunk" out of the bread, but only a small one. It is always possible to retrieve the paddle without tearing the whole bread apart. For us, this is not an issue. This paddle is really small anyway, but the kneading is so effective.The breads we made were good. Now we really eat more bread than before (maybe too much?). We tried all recipes without the milk powder and the results were fine. Probably not a necessary ingredient. We have also tried the pizza dough, to great success. We really like the "delay" feature, too. It is just amazing to wake up and have this freshly baked bread smell in the apartment and a very fresh loaf to start the day.Some tips if you want to add flaxseed to your bread, do not put them in the nuts dispenser but rather add them at the start, with the other dry ingredients. Could Not Be Happier
I can say now we finally have a bread maker I believe we are going to be happy with. My wife and I unpackaged it and with no hassle understanding the instruction and controls had a small loaf of whole wheat bread baking. As most know with bread makers we need to follow the recipe and we did and got great results. 2nd use we dared to rely on it to have a loaf ready for guests, and we were again impressed. Delivery was great, packaging was great, and 2 loaves later I really think we are off to a great product experience. One warning - do not leave the paddle in after removing the loaf. That needs to be picked out immediately while the shaft paddle contact area has some moisture in. I left it in after the first loaf and was nearly impossible to remove by hand the next day with that area dried. Never want to have to use a tool to pry out as that would harm the non stick coating.Our last bread maker experiences left us wondering what to do next for a bread maker. We went through 2 of a cheaper brand and "got what we paid for". Pretty sure some makers intend their cheaper models for "occasional use only" however they would never put that kind of a disclaimer on their product. I just want a change from hunting stores for our kind of bread so we intend to be using this no less than every 2nd day. I will try to update as we use our Breville bread maker.Hey good Amazon family - it is close to a year later and this bread maker has been wonderful. Controls are a tad sensitive for me, with stiff fingers but my wife loves them, not the machines fault. I jammed the paddle a couple of times but again not the machines fault. Should dab some butter or shortening on the shaft before installing the paddle so baked crust layer between the paddle and shaft don't jamb the paddle on. All I can say is good for this unit. Has not given us a real reason to complain.

!!!!! THIS THING IS EFFIN GREAT !!!!!!
I've made probably close to 50 loaves of bread in a few months and it just amazes me how great this maker is. I had another brand before and it didn't even come close to comparing it to this one. Yes, it's a bit pricey but well worth it. I haven't had any issues with the paddle and it's easy to take apart and clean. I take very good care of the maker and it hasn't let me down yet. I really should do up a video on how to clean the paddle as it seems that some people are having issues with it. If you're going to spend a few extra dollars on this make sure you treat it well. You only get out of it what you put into it.I love that it makes horizontal loaves and the bread is easy to remove once baked. I use the 2 lb size and after I take the loaf and cut it straight down the middle then flip each half on it's side and cut the slices...you get two loaves of bread doing this.I've experimented with making various flavors and it always comes out amazingly delicious: Use the directions for the 2 lb setting and add the following after all the ingredients are in:-Cheese Onion Bread: Add 1/3 cup grated old cheddar cheese and 2 tablespoons dried Onion Flakes-Parmesan Basil: Add 1/3 cup parmesan cheese and 1 tablespoon Basil-Bacon Cheese Bread: Substitute butter in recipe with the same amount of bacon grease and add 1/3 cupgrated cheddar. Add 1/4 cup bacon bits (fresh cooked it the best)-Parmesan Garlic Onion: Add 1/3 cup parmesan, 2 teaspoons each of garlic powder, onion powder,oregano and basilMake sure you read the how to care portion of the manual and follow it. I've read some of the reviews and it seems that some people have are not following the clear instructions they give you. At that point do not use those reviews to make a decision on whether to buy it or not. They are completely invalid.

i begin to feel bored and hence would like to leave this boring task ...
I have a Breville Espresso machine and so i decided to give their bread machine also a try. I make bread by hand and still do. But my silly husband loves honey wheat so much and wants me to make it so often, i begin to feel bored and hence would like to leave this boring task to 'Breville'. This is the first time i tried to make Bread with machine and it is a Breville.The machine was delivered last Thursday and arrived in good conditions. The manual is understandable and also writen in a way to be so precise...for a while i doubted if the bread would turn out ok. (In the manual they would tell you all ingredients you put into the machine had to be 80F. You know from actual practices you wont use the thermometer to measure stuff before putting it in).I chose the recipe in the manual (honey wheat raisin). I dont keep any raisin in the house so, i just skipped it. At the same time, i also added an egg and cut butter and salt by half(by adding an egg, i had to use less water). That is to say i didnt follow their recipe very strictly even when it was my first time to use this machine.The function selection is easy to handle. I chose 1.5 pounds, medium crust and whole wheat (not rapid). It took 3:23 hrs(if my memories are not wrong). It was not very lousy and the dough mixing was actually fun to look at. Me and my husband kept looking at it through the glass.(Edited on Sept 2, 2017) i found out i made a mistake in my 3rd trying with the yeast amount. The manual said 'teaspoon' but i mistook it as 'tablespoon'. So i have to come up here to give fairer review. The loaf comes out very nice now. (3rd trial). 1.5lbs, whole wheat(not rapid) and light crust. Pls refer to the photo. I managed also to interact with the machine and was able to take the paddle out when Rise 2 was finished and before Rise 3 started. Also, whether the machine makes a lot a lot noises depends on how dry your dough is. If your dough is too dry, the machine can be very noisy and it is actually a hint to

The Best Bread Machine
Love, love, love it! Very quiet and stable on kitchen counter. I made two beautiful loaves right out of the box! Whole Wheat and Pizza Bread. I have tried Zorushi, Cuisinart, Hamilton Beach, KBS, and none of them appealed to me like the Breville Bread Machine. I like the very efficient 1 paddle Breville. . . it has the power to knead the dough at over 800 watts. Breville is quality. . . whatever you buy. In beginning, you've got to layer the ingredients. . . wet on bottom, dry on top, and be careful with temp of liquids. . . If you have a problem, it could be you, the recipe, or other factors (such as the yeast you have chosen to use) that can affect the outcome of your baked product. Don't blame the well-made machine. The book that accompanies it is very informative (small type) with a few recipes. So I used ones that I already had and one off the internet. Wow! I am in love with this machine!Hi! Aug 16. Perfect performance every time. I have not bought a loaf of sandwich bread since I acquired the machine. Not one! I use Bread Dad’s recipes, whole wheat and white buttermilk bread. Note: don’t open lid and rearrange dough. You don’t need to. Just let it do its thing. Perfect every time. Do yourself a favor, read guidebook thoroughly and follow bread recipes for machines weighing ingredients. Have fun!

For me it worked better than Zojirushi.
Zojirushi was chipping around rivets. I had to return it and replace it with this Breville unit. Been using it for about a year and have been very happy with it. Especially like that you can adjust the cycle durations based on your environment and experience and get to really nicely baked bread result.The only drawback is the top doesn't get dark enough for me. It comes out kind of pale but gets baked quite well. Love the smell of fresh bread.Update: after using it for more than 1.5 years, the machine has been perfect. Make sure to use fresh ingredients. Also, you'll get to perfect results if you are patient and experiment with the durations. I've upgraded it to 5 stars.
